Why Osetra?

A benchmark for balanced, elegant caviar

Osetra is one of the historic caviars of the Caspian tradition. Its appeal lies in contrast: pearls with a satisfying pop, richness without heaviness, and a savoury finish that remains poised and clean.

Natural colour varies from charcoal and deep brown to olive and golden tones. Colour alone does not determine quality; flavour, texture, pearl integrity and freshness matter together.

Let the Osetra lead

Remove the tin from refrigeration shortly before serving and nest it over ice. Use a mother-of-pearl, horn, bone or glass spoon rather than reactive metal.

Enjoy it on its own, or pair it with blini, toast points, crème fraîche or softly scrambled eggs. Dry Champagne, sparkling wine and well-chilled vodka complement Osetra without overpowering it.

Osetra FAQ

Questions before you choose

What does Osetra caviar taste like?

Osetra is prized for a balanced flavour often described as buttery, nutty, earthy and subtly savoury. Its firm pearls provide a clean, satisfying texture and an elegant finish.

What is the difference between Osetra and Imperial Osetra?

Both express the classic Osetra character. Imperial Osetra is produced from more mature Osetra sturgeon, allowing its pearls to grow larger. It is a more refined and exclusive grade, also known as Golden Osetra for its brilliant golden-yellow to silvery olive-green pearls.

Why can Osetra vary in colour?

Colour varies naturally by fish, maturity, farm and batch. Classic Osetra commonly ranges from charcoal and brown to olive-grey, while Imperial Osetra is distinguished by golden-yellow to silvery olive-green pearls. Freshness, texture and flavour are equally important.

Which Osetra tin sizes should I choose?

A 30 g tin is suited to a first tasting, 50 g is comfortable for two to three guests, and 100 g works well for a small gathering. Larger formats are available for events and foodservice requirements. Product sizes and availability shown by Shopify are authoritative.

How should I store Osetra?

Refrigerate immediately at 0–4°C. Keep the tin unopened until serving and follow its best-before date. Once opened, enjoy it within three days.
