Comtesse du Barry gets its supplies exclusively from geese from the South-West for the manufacture of its blocks and whole foie gras. Whole foie gras is made from a single grinder of a single foie gras, it is the most qualitative of the different types of foie gras. Place the goose foie gras in the refrigerator the day before tasting. Take care to take it out just 15 minutes before tasting. Slice it at the last moment because our products are dye-free and preservative-free and would turn gray superficially on contact with air but without altering the taste.
