Fresh Italian Burgundy Truffles
Burgundy truffles (Tuber unicinatum) have a delicate but distinctive hazelnut flavour and an intense aroma. They are more flavourful and aromatic than summer truffles, but not as robust in flavour as Perigord black truffles. These delicacies from France and Italy are similar in appearance to black winter truffles, except that they are somewhat lighter in colour, with a veined, coffee-coloured interior. Burgundy truffles are best used fresh, grated over pasta, eggs, mashed potatoes and salads, or to finish butter sauces for meats.

Store in the refrigerator, wrapped in a paper towel (change the paper tower daily or as needed) and in an airtight container. Also some people like to store it in a container filled with rice, you can use the rice to cook a delicious risotto afterwards.
